World Whisky Day Recipe


Lamb Casserole with Whisky, Coffee and Black Olives

This mouth-watering recipe from Head Chef, Samir Dewing, has been a firm favourite on the menu and is the perfect way to subtly give a nod to World Whisky Day.
Best served with couscous, rice or mashed potato.

Ingredients:

1 leg of Lamb deboned and cut into cubes. (approx. 2-3kg) or ask your butcher to do this for you

Marinade Ingredients:

3 tsp. chopped fresh garlic

1 bay leaf, crushed
1 tsp. salt
Pepper to taste
3 chilli, finely chopped
250ml red wine
250ml white wine
2 tsp. ground paprika
Combine and place over the lamb cubes for 24 hours. 

Casserole Ingredients:

250gm raw bacon, chopped

50ml oil
50gm butter
12 large tomatoes, chopped
150ml strong black coffee
50ml Whisky
Handful of pitted black olives, halved

3 onions, chopped

Method:

Drain the marinade from the lamb and reserve for further use.

In a large pan, heat the oil and the butter and fry the bacon and the onions.
Add the lamb cubes and brown well.
Add the chopped tomatoes and the reserved marinade.
Cook for 30 minutes, add the Whisky and coffee, and leave to simmer on a low heat till tender.
Before serving, stir in the olives.
